The pair felt that they wanted a food product that used the transformative power of plant-based foods. Kirsten lived a vegan lifestyle and advocated for animal welfare. She said she learned a lot from the book How Not to Die by Dr. Michael Greger, which showed the dangers of dairy consumption. She then gave up cheese, which she loved.

Fred then joined her endeavor and they set out to create artisan vegan cheeses that could taste better than traditional dairy cheese.  Their goal was to create food that tasted good while also advocating for cruelty-free food. They worked with chefs, fermenters, and dairy cheese makers to create their unique form of cheesemaking. Their cheeses are only made with nuts, cultures, herbs and spices, vegan yogurt, or oil.
