Today show weatherman Al Roker got cooking for his beautiful queen, Deborah Roker. The 68-year-old shared with fans a glimpse of what he and his wife had for dinner. Although the weatherman is popular for hosting the NBC show, he often showcases his love for cooking on social media. In 2004, he even hosted a food network show named Roker On The Road. Al Roker Cooks Beef Barley Soup For Deborah Roberts
Al Roker’s love for cooking was evident in the show. He was also a part of Cooking Up A Storm With Al Roker where he took viewers through an entire holiday meal, course by course. The six-episode podcast also welcomed some special guests. In his latest Instagram video, Al Roker cooked a soup for his darling wife.
The NBC journalist started the video by showing The New York Times, Sunday Edition which contained a beef barley soup recipe. Al mentioned that Deborah Roberts really liked the way the soup looked in the picture, so he decided to make it for her. On the table, he already had pre-cut beef, carrots, scallions, leeks, parsnips, turnips, barley, and other ingredients for the soup.

Al started by browning the beef in the pan and once he was done, he sautéd some carrots and leeks and added some caramelized tomato paste to the mix. After mixing everything with some basic spices, he poured in some beef broth and let the mixture cook with the browned beef for a few minutes. For a final touch, he added a bouquet of rosemary, sage, and thyme to the mix. After cooking for an hour, he added some parsnips and barley, and kale to the soup and cooked for another 45 minutes.
He captioned the clip, “The @nytcooking insert on #soup was right on time this weekend. Our good friend @clarkbar recipe for #beefbarleysoup was easy and can’t wait for dinner.”
In the comments section, Deborah replied, “This soup was epic. Thanks, honey!”

Al Roker Is Focusing On Consuming Less Fat
Lately, Al has been watching what he eats after his recent health scare. He explained that his healthy eating habits have helped him recover faster. After his extended illness, he has lost a lot of weight and his doctors wanted him to consume more protein and limit fat. The weatherman explained his primary diet mostly contains nutrient-rich food like quinoa, salmon, Brussels sprouts, and many more.
